A Story Rich in History

We are a Family owned business. It all started in Odessa, TX in July of 1998. Our mother had a love for cooking traditional authentic Mexican Food. Maria Gonzalez, originally from Jalisco, Mexico, located in west central Mexico. The word ''Jalisco'' derived from Nahuatl means '' sandy terrain.” Maria’s deep knowledge of her hometown’s culinary tradition and her passion to serve others became the driver to her new adventure over two decades ago. Having worked in the restaurant industry for over 20 years, she was able to add a “West Texas” twist to her favorite Mexican recipes. With the support of her husband and children, she created the Jalisco’s Restaurant menu and has served the people of the Permian Basin since 1998.


In 2003, Maria was recognized as “Business Woman of the Year'' by the Mexican American Network of Odessa. Additionally, in 2008, she was recognized by US Congressman Mike Conaway, for her hard work and determination as a business owner.

The restaurant is well known for their Birria Plate, a traditional Mexican dish, originally made with goat meat, but also made with beef, veal, lamb or pork. It can be served as a stew or as a taco filling. In gastronomic terms, the word Birria means “Exquisite savory dish, full of culture and tradition.” Birria originates right at the center of the state of Jalisco, in the town of Cocula, located northwest of Lake Chapala, and southwest of Guadalajara. Other popular plates include “Red and Green Homemade Enchiladas” made from scratch, “Mar y Tierra'' which includes a mix of seafood and other meats just to name a few of our menu options.
